Beat the eggs in a bowl. Heat 1 tbsp oil in a pan, and scramble the eggs.Set aside.Heat 3 tbsp oil in a wok and sprinkle minced garlic. Fry till light brown.Then add chopped onion and white stalks of spring onion.Add cubed carrots and salt to taste.Toss few minutes,then add other vegetables and stir fry.
  2. Add chilli sauce, soya sauce,MSG or seasoning cube,black pepper powder and salt to taste to the sautéed vegetables. Add the cooked rice,chopped spring onion and scrambled eggs.Add a little more salt to taste keeping in mind soya sauce is salty.Toss and fry till well mixed and done.
  3. Serve hot with chicken or veg manchurian or any Chinese veg or non-veg side dish in dinner.
