- 200 gms boneless chicken, cut into cubes
- 200 gms medium sized prawns cleaned properly
- 1 Big Capsicum
- 1 Big Red Bell Pepper
- 1 Big Yellow Bell Pepper
- 1 handful pudina leaves
- 1 handful coriander leaves
- 1 tbsp Ginger / Garlic paste
- 1 lemon juice
- 1 tsp Chilli powder
- to taste Salt
- As required Ghee
- 1 cup fine quality rice(cooked)
- As required Mixed herbs
- 1 tbsp butter
Steps to make to make Chicken and Prawn Kebabs with herbed Rice
- Make a paste of pudina and coriander leaves with 2 green chillies, and marinate with the boneless chicken pcs. Add lemon juice and ginger/garlic paste and some salt.Now de vein the prawns and add lemon juice and ginger/garlic paste, salt and chilli powder. Heat a charcoal on the gas,till it becomes red hot. Put the charcoal in a steel bowl and put it in the centre of the marinated chicken and prawns.
- Pour ghee on top of the charcoal. Once the smoke starts to come out, immediately close the container with a tight lid. Make sure the smoke should stay inside. Keep like this for 30 mins.In the mean time make the rice,and let it cool.Cut the capsicum and bell peppers in triangular shapes. Take skewers and keep them in the water for 15 to 20 minutes. This is done, so that they do not break.
- After 30 minutes, take one skewer at a time and skew the marinated chicken pcs, along with some capsicum and bell pepper. Do the same with the prawns also.Take a nonstick tawa and brush some ghee on it.Brush ghee also on the marinated kebabs. Place them on the tawa, keeping the flame low. Keep turning occasionally, so that they don't burn.If required add ghee.Once they become brown in colour, take them out from the tawa.Don't over cook them or the juiciness will go away.
- Now take a frying pan,add butter and pour in the cooked rice. Add a few mixed herbs, and some salt.Toss the rice properly, till they are done,and a nice flavour comes from it.Remove from heat.
- Now plate the ingredients. First put the herbed rice in the centre of the plate. On top of the rice place the chicken kebabs (which will look green in colour, because of the pudina and coriander paste), on both the sides.Now put the prawn kebabs on the other side. You can decorate according to your choice. Serve hot for dinner.
